You'll probably be heading out to do the shopping, you may have invited some friends over in a drunken haze two weekends ago. Don't worry the day is here when you have to spend all day in the kitchen after a real grind this week. No problem, splash out on the fillet of beef and knock this up it's really easy and anyway after the first two glasses of wine who cares. Your guests will love you, just get the Twister out and everyone will be on the floor. Just remember what Thomas says about mistakes but yours won't be error just maybe not quite developed or well practised.

Cajun Beef Fillet with Herb Roasted Potatoes

 For 4 persons



Cajun Beef Fillet with Herb Roasted Potatoes

4 x 200g Fillet Steaks
2 tbsp Dijon Mustard
2 tsp Coriander Seeds
2 tsp Black Peppercorns
2 tbsp Chopped Parsley
2 tsp Chopped Thyme
1 tbsp Salt
1 tsp Cayenne Pepper
1 tsp Paprika
1 tsp Ground Cumin
Herb Roasted Potatoes
1 tbsp Oil
24 (1kg) Baby New Potatoes
2 tsp Oil
Half tsp Cajun Seasoning
1 tsp Chilli Powder
1 tbsp Chopped Parsley
1 tbsp Chopped Basil

Spread beef fillets with Dijon mustard all over. 

Using mortar and pestle, lightly crush seeds and peppercorns, add herbs, salt, cayenne pepper, paprika and cumin; mix well.

Coat beef fillets in herb mixture. Heat oil in pan, add beef, cook until browned.
Transfer beef to wire rack in baking dish. Bake, uncovered, at 180°C about 12 minutes or until cooked as desired.
Stand beef 10 minutes before slicing. Serve with herb roasted potatoes.
Herb roasted potatoes: Place potatoes in separate baking dish, drizzle with oil, add seasoning and chilli powder; mix well.
Bake at 180°C about 45 minutes or until tender.
Add herbs; mix well.

Hot and spicy serve with a green salad. You can get one whole piece of beef for this recipe if you like.
