Fishing on Friday

Great it's over, everything back to normal. Weeping and gnashing of teeth!

Let's do the relaxation thing this Saturday and Sunday and watch a film and here's a joke for you;

Man checking out the books in the occult section of the local bookshop. Young plumpish woman in tinted spectacles, Celtic medallion and long flowing wispy dress with a shawl. Mentions to the man thumbing a book on mind reading, "I used to be a medium you know." " Oh really?" retorts the man. "Yeah but I'm a large now."


My recommended film for this weekend viewing is The One Hundred Foot Journey.

It's a load of sentimental codswallop but 
there are some good bits of cooking in it especially the pigeon.

So to a Friday night pescatorian meal I've been fishing around for.



Cod & Quinoa Burger
For 2 Burgers

200g Cod Fillet
50g Quinoa
1 Slice of Bread
Salt & Pepper
A splash of Soy Sauce
A couple of leaves of fresh Basil, Parsley and Mint
2 Brioche Buns (recipe at www.cookingpete.com)
4 King Prawns
Lettuce and salad items for garnish
1 tbsp Mayonnaise
1 tsp English Mustard
Chips

Place the bread in a food processor and process to fine breadcrumbs.
Cook the quinoa in boiling water for 20 minutes. The water or stock should be absorbed by the quinoa allow to cool then add to food processor and process.
Dice the cod and add to food processor with soy sauce, pepper and herbs.
Them remove and shape into burgers. Cook the burgers and the prawns. Mix up the mayo and mustard
Assemble the burgers in the buns with salad dressing with the mustard mayo and top with prawns, serve with chips.
